Step 1: In a large pot, heat some water. Next, add the potatoes and bring them to a boil. Next, add the carrots for four minutes before adding the celery. Take out the vegetables when they are done cooking (about 4-5 minutes).
Step 2: Once the vegetables are done cooking, move on to cooking your lamb. Add 1/2 cup of water to the pot while placing your lamb into a small bowl and pouring in some cold water.
Step 3: Once the meat is done cooking, take a paper towel and pat the water out of your lamb.
Step 4: Next, place your lamb into a large bowl and sprinkle in some salt and pepper. Pour in 1 Cup of drinking water and place the bowl into the fridge until you are ready to assemble your curry.
Step 5: Take out your vegetables from this step when they are finished cooking. Add them back into your pot along with all of your other vegetables. Let everything simmer until they are done cooking (about five minutes).

Step 7: Place meat into a large bowl and sprinkle in some salt. Next, add your celery, onions, peppers, potatoes, water chestnuts, and coconut milk (using the cup measure).
Stir everything together until it is combined. Lastly, add any other spices into the mix (I added garlic powder).
Step 8: Grab your pot from this step and pour your meat soup into the pool. Stir everything together until it is mixed thoroughly.
Step 9: Turn on the heat under your pot, ensuring that it is not too high! Let the curry boil for 15 minutes before turning the heat off and letting it cool off for 10 minutes.
