- 5 shallots, chopped
- 1 tablespoon ground coriander
- 2 tablespoons lime zest
- 1 stalk lemongrass, white parts only, finely chopped
- 1 teaspoon salt, or to taste
- 1 teaspoon shrimp paste, optional
- 2 cups coconut milk, not cream of coconut
- 1 pound crabmeat
- 2 tablespoons fish sauce, optional
- 1 teaspoon sugar
- 3 to 4 lemon or lime leaves, optional
- 1/2 teaspoon freshly ground black pepper, or to taste
- 2 tablespoons chopped cilantro for garnish
01. Mix the chile peppers, ginger, garlic, shallots, and coriander in a small bowl. Set aside.
02. Mix the lime zest and lemongrass with salt in another small bowl. Set aside.
03. In a wide saucepan or skillet over high heat, add 2 cups of coconut milk and shrimp paste if using) and bring to a boil; then simmer for about 10 minutes.
04. In a small bowl, mix the crabmeat, fish sauce (if using), sugar, pepper, and salt. Add to the coconut milk in the skillet and simmer for about 1 minute; then remove from heat. Set aside.
05. To assemble: In a small bowl, mix the coriander mixture with coconut milk until uniform in color.
06. Pour the coriander-coconut milk mixture over the crab and mix gently.
07. Garnish with cilantro and lemon leaves if used. Serve with jasmine rice.
