How To Make Taiwanese Pineapple Cake Recipe?
- 1 3/4 cup cake flour
- 1 1/2 tsp baking powder
- 3 eggs, room temperature
- 8 tbsp sugar (1 cup)
- 4 tbsp butter, room temp.
- 1/2 cup pineapple juice
Step 1. Combine the pineapple chunks, sugar, salt, and cake flour in a large bowl. Mixture until the pineapple chunks are well-coated with flour
Step 2. Set aside for 30 minutes to 1 hour for the pineapple to absorb all the liquid
Step 3. In a separate bowl, whisk together the egg whites and water. Once combined, add in the vanilla and set aside
Step 4. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius) approximately 15 minutes before baking
Step 5. Combine butter and sugar. Mix until the mixture is light in color
Step 6. Sift together flour, cornstarch, and baking powder
Step 7. Combine the pineapple chunks with the dry ingredients. Then add the wet ingredients (egg whites, butter/sugar mixture, and vanilla) and mix until they are well combined
Step 8. Add the pineapple chunks to the batter and up to them gently. The batter should be fluffy but not liquidy
Step 9. Grease and flour a cake pan. This can be done by pouring some melted butter on the pan and wiping it around
Step 10. Pour the batter into the greased pan. Then bake for 25-30 minutes, or until a toothpick comes out clean
Step 11. When finished baking, let the cake cool for 5-10 minutes
Step 12. Remove from pan onto a wire rack to cool completely
Step 13. Drizzle pineapple juice on cake aftercooled
Step 14. Sprinkle on top of a little salt and serve.
