- 1/4 cup Thai basil leaves and stems, loosely packed, sliced into 1-inch pieces
- 3/4 lb. Fresh jumbo prawns, peeled, deveined, and coarsely chopped (about 3 lb. total)
- 2 cups light coconut milk (with 1/2 cup water added)
- 1/4 cup Red Thai curry paste (pra rad prik)
- 3/4 cup Fresh green beans, cut into 4-inch-long pieces (about 1 lb.)
- 3 stalks of Celery, thinly sliced diagonally into half-inch pieces (about 1 cup)
- 8 whole eggs, hard-boiled and peeled
- 6 Bamboo shoots, well rinsed and sliced into 1-inch by 1-inch strips (optional)

Step 1. Wash, rinse, and drain the prawns. Let them dry.
Step 2. Heat a pan over medium-high heat. Add oil and the shallots, and cook for about 1 minute until fragrant. The shallots will turn golden in color and smell good. Do not brown them, though, as it will burn the shallot’s aroma.
Step 3. Add fresh basil stems and leaves to the pan, followed by freshly minced garlic cloves. Sauté for about 30 seconds until garlic is aromatic (you can also use a food processor to mince the garlic).
