- ¼ tsp. lemon juice
Step 1. In a large frying pan sprayed with non-stick oil or butter, fry the celery stalks and onions on low heat until they are well cooked.
Step 2. Once the celery and onions are cooked, set them aside in the same pan, add chicken on medium heat, cook until no longer pink inside. Step 3. Add mayonnaise dressing and lemon juice, cook for about 2 minutes or until the mixture thickens. Set aside to cool off for a few minutes.
Step 4. Add chopped celery, bell pepper, and parsley in a large bowl with celery stalks and onions.
Step 5. Add cooked chicken to the mixture and mix to combine.
Step 6. Add bacon pieces, lettuce, and sliced tomatoes to shredded lettuce. This is now ready to serve or wrap up in a sandwich wrap and enjoy!
To make this Potbelly Chicken Salad Recipe more flavorful, I recommend cooking the chicken in a separate pan with some butter or non-stick oil until it is fully cooked before adding it to the salad.
