  • 1/2 pound fingerling potatoes (¼” sliced)
  • 1 cup chickpeas (drained and rinsed if using canned)

  • 2 cups brown rice (for serving)
  • Toasted coconut (for serving)
  • Fresh cilantro (for serving)



In a small bowl, whisk together the fish sauce, green curry paste, rice vinegar, lime juice, and sugar until smooth.


Add the coconut milk to a medium saucepan over medium-high heat and stir in ½ cup of the green curry mixture. Bring to a boil, reduce heat and simmer for 2 minutes.
