How To Make Pork Curry Recipe Thai?

If you prefer a more spicy dish, you can reduce the black pepper used for the whole dish (by one-third). This will not affect the flavor at all, and the only flavor change will be that it will taste slightly spicier.
- 1 lb of pork (center cut, boneless, fatty cuts)
- 2-3 tbsp of vegetable oil
- 4 cloves of garlic, finely sliced
- 1 Thai chili paste or chili flakes powder or 1 tsp of red chili peppers (optional) 4 tbsp cooking oil A large bunch of coriander leaves
- 1 green bell pepper, cut into strips
- One cup of baby corn, cut into pieces. Salt to taste

Step 1. Cut the pork into small cubes. Heat oil in a wok or heavy-bottomed pan. Add the pork and fry until it turns light brown. Remove from the pan and keep in another bowl.

Step 4. Add water (or coconut milk if you want to make it creamier) to cover the ingredients and bring it to a boil. Add red chili sauce if you want it spicier. Turn off the heat and let cool completely before using a hand-held blender to puree the ingredients into a smooth paste.
Step 5. Add the pork cubes back to the pan and heat until crispy.
Step 6. Serve with rice noodles, garnish with toasted coconut flakes and red chili sauce if you want it spicier. Yield: 3-4 servings
