  • For the Sponge Cake: 250g Unsalted Butter, softened
  • 250g Caster Sugar
  • 1 Egg Yolk, room temperature
  • 1 tbsp Milk
  • 1 tsp Vanilla Extract
  • For the Coffee Buttercream Frosting: 200g Unsalted Butter, softened
  • 300g Icing Sugar (softened)
  • A pinch of salt  50g Roasted Ground Coffee Beans 100g Whipped Cream for decorating  


Step 1. Preheat the oven to 180°C (Gas mark 4).

Step 2. Line 2 baking sheets with baking parchment.

Step 3. Place the butter in a large bowl and beat it until soft with a wooden spoon. Add the caster sugar, egg yolk, milk and vanilla extract and beat until smooth. Combine the flour, bicarbonate of soda, and salt in a separate bowl. Gradually add to the butter mixture and gently fold in using a large metal spoon to give a lighter texture.

Step 4. Spoon the mixture into 6 x 20cm/8in cake tins and wrap each container on the countertop to remove large air bubbles.

Step 5. Bake for 15-20 minutes or until golden-brown and springy when pressed with your finger. Remove from the oven and set aside for 10 mins before turning out onto a wire rack to cool completely.

Step 6. Combine the ground coffee beans and icing sugar in a bowl and stir together using a wooden spoon to make the frosting. In a separate bowl, beat the butter until soft. Add the sugar mixture and beat again until smooth.

Step 7. Sandwich the cakes together with a layer of frosting in between each one and spread over to give an even finish. Spread over the top and sides of the cake with the remaining buttercream to smoothen it out, then chill for 30 minutes to set.

Step 8. Place in a sieve over a bowl of hot water for five minutes to soften it up slightly – this helps it spread more quickly.
