What Is Malaysian Curry Puff Recipe?
Curry puff is a popular snack food in Malaysia and can be found in most hawker centers and food courts. A mixture of spicy curry powder and shredded chicken or vegetables is placed in the middle of a partially-fried pastry crust.
This is then baked until the pastry is golden brown and served warm with a side of creamy peanut sauce. This recipe yields about 30 curry puffs.
- 3 cups all-purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 4 tbsp cold butter, cubed (1/4 cup)
- 1/2 to 3/4 cup water, ice-cold (add gradually). Filling: 1 small onion, finely chopped
- 2 tbsp soy sauce
- 1 large clove of garlic,
- minced or grated 2 pieces of chicken breast,
- diced (can also use shrimp or vegetables of your choice) 1 tbsp curry powder 1 egg 1 can of coconut.
Step 1. Heat the water in a large pot until boiling.
Step 2. Add all-purpose flour, salt, baking powder, and cubed butter to the boiling water and stir vigorously until it froths up.
Step 3. Add egg, stirring gently while doing so. If it gets too hot, turn off to medium heat and continue with steps 4 or 5.
Step 4. Remove mixture from heat when it is soft enough to form into a disk (without rupturing).
Step 5. Use a rolling pin to roll the dough out into 1/8″ thick, dusted with flour when needed.
Step 6. Cook onion, garlic, and curry powder for about 5 minutes on medium heat, occasionally stirring until fragrant.
Step 7. Add chicken and soy sauce to the onion mixture and cook for another 5 minutes on medium heat until the chicken is cooked through.
Step 8. Preheat the oven to 180C (350F) and lightly grease a baking tray with cooking oil or shortening.
Step 9. Place dough on a clean surface and spread the filling inside, leaving some space on the top.
Step 10. Use a rolling pin to flatten the filling into an even layer that covers most of the dough, leaving a small space in the center for stuffing and sealing it with egg wash.
Step 11. Seal the edges of the dough with egg wash and add any desired toppings like sesame seeds, crushed peanuts, or chopped scallions before baking it for 20-25 minutes until golden brown.
Step 12. Serve warm with peanut sauce.
Refrigerate leftover dough for up to 3 days, so you can bake them at a later time if you feel like they are getting a little stale.
