Heat ghee in a large heavy-bottomed pan over medium-high heat. Season meat with salt and pepper, add to the pan, and cook until browned on all sides.
Add onion, curry powder, and masala to the pan and cook until golden brown. Add garlic, ginger, turmeric, and cumin. Stir constantly while cooking for 1 minute more.
Pour in broth and simmer until the pot begins to boil. Add the sliced liver halves and stir.
Partially cover the pan and simmer, occasionally stirring, for 15 to 20 minutes, or until the lamb or beef is tender.

Place the lid on top of the pot and heat up again. Cook, constantly stirring, until this mixture starts to boil; then reduce heat and let the stew simmer for 10 minutes.
Add the sliced onions and stir well. Cook for about 30 minutes until most of the water (about 1/4 cup) evaporated. Serve warm with naan bread, rice, or other Indian flatbread.
