Step 3: Put on medium heat and cook for 10 minutes until slightly browned, then stir through the curry powder.

Step 4: Add water to reduce the spiciness, or use less water for a milder taste. If using dried mushrooms on the bone, break them into small pieces before adding them to the pan.

Step 5: Stir through the pasta and cook for 10 minutes on low heat to release the flavors, but do not let it get too dry.

Step 6: Add the coconut milk and water to the boiling point, then add the aubergine slices.

Step 7: Cook for 30 minutes on a low heat until tender, then stir through lime juice.
