- 12 oz (355 g) of unsalted butter at room temperature
- 12 oz (355 g) of sugar
- 4 eggs at room temperature
- 15 oz (425 g) of all-purpose flour, sifted, plus extra for the pans
- 3 tbsp (50 ml) of milk or water
- 2 pounds (900 g) of dark cherries with the stones removed, hulled and pitted
- 4 tablespoons canola oil
- 3/4 teaspoon salt
- 1 cup buttermilk
- 1 tablespoon pure vanilla extract
- 1 + 1/3 cups all-purpose flour
- 1 cup cake flour
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
In the bowl of an electric mixer, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating on slow speed between each addition.
Sift both flours and baking soda into the bowl along with salt and mix thoroughly. Stir in milk or water and vanilla extract until just combined (do not over mix).
Spoon the batter into 5 greased and floured (or parchment lined) 9-inch square cake pans.
Bake in preheated oven for 90 minutes (1 hour). After the first 30 minutes, remove the trays from the oven and set them on a wire rack to cool. Once the cakes are cool, gently remove them from their pans and transfer to a cutting board.
When cool, cut each cake into slice horizontally so that it is square in shape. Discard the top layer of each cake if it is uneven and cut the cake again to make it look neat.
Place a square cake onto each plate you want to serve the dessert on. Top with cherries, using a ring mold or small glass to form an attractive circle pattern around the edge of each cake. Repeat with remaining layers and cherries.
Melt together the canola oil and 3/4 teaspoon of salt in a medium saucepan. Beat cream together with remaining 1 + 1/3 cups of flour until it forms ribbons.
Beat in pure vanilla extract, then stir beaten egg yolks into the batter to make a stiff paste. Drizzle with melted oil mixture, stirring constantly, then immediately pour onto cherries.
Spoon some cream onto small plates or serving dishes and top with a cake slice. Serve immediately.
