- 1.5kgs chicken pieces
- 2tbsp ginger and garlic paste (grated)
- 1 tsp coriander powder
- 1 cups buttermilk
- 1 small onion, julienne
- 1/2 tsp cumin powder
- 3 tablespoons yogurt
- Salt to taste
- 3-4 cups vegetable oil for frying
For the fried masala mix:
- 1.5 cups besan,
- 2 tbsp ajwain,
- 2 tbsp sesame seeds,
- 1 tbsp chat masala (learn how to make it here) and
- salt to taste.
I usually make about 3-4 cups of fried masala mix for this recipe.
Step 1: Marinate chicken pieces in ginger and garlic paste, coriander powder, buttermilk, salt, and fry masala mix for 2 hours. Keep them covered in a clean bowl.
Step 2: In the meantime, prepare onion slices and curry sauce.
Step 3: Once the two hours are up, take out the chicken pieces and drain oil on a paper towel.
Step 4: Heat oil in a frying pan, add marinated chicken pieces and fry until they turn golden brown.
Step 5: Take out the chicken pieces with a slotted spoon to a plate with a paper towel.
Step 6: Place the fried chicken into the slow cooker and pour the curry sauce over them.
Step 7: Turn the slow cooker on high and cook for an hour, then turn it down to low for 2 more hours. The curry should be very creamy and the chicken very tender.
Step 8: Take out the chicken pieces, let them cool for a bit, and remove the skin and beard.
Step 9: Cut the chicken in half and serve along with rice with any extra curry sauce.
