  • Salt to taste
  • 3-4 cups vegetable oil for frying

  • 1.5 cups besan,
  • 2 tbsp ajwain,
  • 2 tbsp sesame seeds,
  • 1 tbsp chat masala (learn how to make it here) and
  • salt to taste.

I usually make about 3-4 cups of fried masala mix for this recipe.

Making Instructions:

Step 1: Marinate chicken pieces in ginger and garlic paste, coriander powder, buttermilk, salt, and fry masala mix for 2 hours. Keep them covered in a clean bowl.

Step 2: In the meantime, prepare onion slices and curry sauce.

Step 3: Once the two hours are up, take out the chicken pieces and drain oil on a paper towel.

Step 4: Heat oil in a frying pan, add marinated chicken pieces and fry until they turn golden brown.
