1. Rinse the fish thoroughly and pat dry.

2. Heat oil in a saucepan or Kadai, add onion and garlic, and fry until translucent.

3. Add red chili and curry powder, and fry for a few minutes until aromatic. Then add vinegar, fish sauce, and salt to taste, and stir well to mix in the ingredients.
