- 4 Whole Eggs, hard-boiled
- 1 tablespoon Ghee
- 1/2 teaspoon Cumin seeds (Jeera)
- 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
- 1/4 teaspoon Asafoetida (hing)
- 3 cloves (Laung)
- 1 Bay leaf (tej patta)
- 1 Black cardamom (Badi Elaichi)
- 2 Cardamom (Elaichi) Pods/Seeds
- 4 Dry Red Chillies
- 1 inch ginger, finely chopped
- 4 cloves Garlic, finely chopped
- 1 Onion, finely chopped
- 1 cup Homemade tomato puree
- 2 tablespoons Curd (Dahi / Yogurt)
- 1 teaspoon Kashmiri Red Chilli Powder
- 1/2 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Coriander Powder (Dhania)
- Salt, as needed
- Water, as needed
- Coriander (Dhania) Leaves, a few sprigs, finely chopped
1. Cut the eggs into halves if desired. Set aside.
2. Heat ghee in a large non-stick pan over medium flame. Add cumin seeds, mustard seeds, asafoetida, cloves, bay leaf, and cardamoms. Saute for a few seconds till they crackle and splutter.
3. Add dry red chilies and ginger-garlic paste. Saute till the raw smell of ginger-garlic disappears.
4. Add onion and saute for a few minutes till it turns soft and translucent. Add the chopped tomatoes, salt, and turmeric. Stir well to mix.
5. Add curd/yogurt, drizzle water if necessary, and keep stirring till the raw smell of curd disappears.
6. Cover the pan with a lid, reduce heat to low, close the lid tightly and cook for 10 minutes. Do not open the lid during this time, or the mixture may spit immediately while cooking.
7. Open the lid, add coriander powder, red chili powder, soaked saffron strands, and salt, and mix well. Mix thoroughly till all the spices are blended with the rest of the ingredients.
8. Add 4 eggs to this prepared dish and mix gently with a spoon.
9. Cover the pan again and cook for 5 minutes.
10. Now, open the lid and gently mix again by stirring carefully to avoid breaking whole eggs into smaller pieces.
11. Cover the pan again and cook for another 3 minutes.
12. Open the lid, add chopped coriander leaves, mix well, and switch off the flame. Serve hot with roti or naan or rice.
1. This dish can be eaten as it is or served with peas pulao, plain rice, jeera rice, Mirchi bhindi pulao (Spicy okra pilgrim), lauki Palya (Bottle gourd pilaf).
2. You can also add 1 chopped tomato to the mixture before covering the pan with a lid.
3. If you do not have curd or yogurt, you can use 1 cup of water instead of curd/yogurt to prepare this dish.
4. You can also add kewra essence (Kapoor) and saffron strands while boiling water in step 4 and then skip adding curd/yogurt in step 6.
5. Do not add more water to the dish in step 6, as it will make the curry soft and watery.
