Ingredients for dumplings
- 12 oz. pork shoulder, sliced
- 1/2 tbsp cornstarch
- 1 tsp soy sauce
- 1 tsp oil
- 1 tbsp Shaoxing wine (or rice wine)
- 1/2 tbsp sugar
- 1 tbsp oil
- 3 cloves of garlic, minced
- 1/2 onion, sliced
- 4 Chinese mushrooms, sliced
- 1 lb rice cakes, washed and drained
- 3 cups cabbage, sliced
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1/4 tsp ground white pepper
- 1 tsp sugar
- Lao Gan Ma Spicy Chili Crisp
- Scallions, sliced
1. Cut the pork into cubes. Marinate with soy sauce and cornstarch for about 5 min.
2. In a clean pan, add pork and oil on medium heat for about 6 to 7 min or until cooked through.
3. Add garlic and Shaoxing wine to the pan, cook for another 2 min, remove from heat and set aside while preparing the rice cakes.
4. In a pan, add rice cakes and water for the rice cakes. Cover and cook on medium heat for about 15 to 20 min. Turn it over 3 times while cooking.
5. In another pan, add oil on medium heat, add onion and mushroom and cook for about 5 min or until the onion turns translucent. Add cabbage, sesame oil and vegetables, soy sauce, sugar, and ground white pepper on medium heat for 30 to 40 seconds or until cabbage is wilted.
6. Line the bottom of a bamboo steamer with cabbage leaves. Place the sliced rice cakes on top and arrange them in a single layer. Please place them in a steamer and steam for about 10 to 15 minutes, or until the rice cakes are translucent.
8. Take one rice cake out of the steamer, layer about 0.5 oz of pork followed by a 1 tbsp of garlic and mushroom mixture, some Lao Gan Ma Spicy Chili Crisp, and chopped scallions as desired.
9. Place 0.5 oz of pork in a cup, and roll the dumpling together with the dough.
10. Repeat this process until all the ingredients are used up.
11. After steaming, leave them in the bamboo steamer to cool off for about 10 minutes before you serve them.
