- ½ tsp Ground Black Pepper
- ½ cup Curry Powder (or store-bought)
- ½ tsp Salt (more to taste)
- 2 tbsp Coconut Oil (optional)
Step 1: Pour chicken broth over quinoa in a small mixing bowl. Let sit for 10-15 minutes or until the broth is absorbed. Add sweet potatoes, rice, currants, and oil to a medium-sized mixing bowl.
Step 2: Add all the ingredients together in a large mixing bowl. If the batter seems too dry, add a few more tablespoons of almond milk.
Step 3: Grease your hands with coconut oil, scoop ⅓ cup of batter per patty, and flatten it out to make a round shape. Place filled patties on a baking sheet lined with parchment paper and bake for 12-15 minutes at 350°F.
