How To make Chicken Courgette Curry Recipe?

  • Prepare Time: 25 Minutes
  • Cooking Time: 1 Hour
  • Serves: 4 People


  • 1 tbsp oil
  • 500g chicken breast, diced
  • 1 onion, chopped finely
  • 4 cloves of garlic, crushed or grated with a garlic press
  • 2 tbsp curry powder – try to use a mild (hotter versions can be overpowering) but use hotter if you like it spicy. I used Patak’s Mild Curry Powder.

Cooking Directions

Step 1. Heat the oil in a large saucepan over medium heat and cook the onion for two minutes.

Step 2. Stir in the chicken, garlic, and curry powder and cook for five minutes or until the chicken is white.

Step 3. Chop up the courgettes and add to the saucepan with some salt and pepper. Stir everything together, cover with a lid and cook for fifteen minutes.

Step 4. Add a can of chopped tomatoes to the pan and stir well again. Cook for a further ten minutes.

Step 5. Stir in the peas and heat for 2-3 minutes until it is piping hot.

Step 6. Serve with rice or pasta to ensure you get your full quota of carbs, and enjoy!

How long do I cook the chicken to make this recipe?

Unfortunately, I do not know the answer to this because chicken breast is what I use for most of my recipes. It will depend on how many chicken breasts you cook and how long you plan to cook them.

I usually cook the chicken breasts in a slow cooker. This means that you can set the time it takes to cook depending on what time you start your curry early in the morning or when you intend on cooking it.

 Is it possible to save time by using frozen chicken versus fresh chicken?

Yes! You can!

This recipe will work perfectly with frozen chicken breasts. Place the frozen chicken breasts into a bowl, cover with water, and place in the microwave for 12 minutes on high. This will defrost them without damaging their texture or taste.
