Step 1: Wash vegetables and cut them into pieces. Peel potatoes, cut them into medium-sized pieces, and wash them well with water.
Step 2: Heat 1/2 cup water in a heavy-bottomed pan, add mustard seeds and let it crackle for 1 – 2 minutes. Add green chilies, slit and curry leaves, turmeric powder, red chili powder, and salt. Let it cook for 2 – 3 minutes.
Step 3: Add potatoes and stir well, making sure the mixture does not stick to the bottom of the pan. Add more water if needed. Add coriander powder, garam masala powder, salt, and turmeric powder. Stir well for about 2 minutes.
