  • 4 large skinless white fish fillets
  • ½ lemon, juiced
  • 2 tbsp mild Caribbean curry powder

  • 1 scotch bonnet chili, finely chopped

  • 400g tin coconut milk to serve cooked rice


1. In a large bowl, combine the lemon juice, Caribbean curry powder, groundnut oil, spring onions, and ginger.

2. Add the fish fillets and mix well, then set aside to marinate for 30 minutes.
