- 1 cup coconut milk
- 1 – 2 tablespoons red curry paste
- 1 cup chicken
- 3 – 5 kaffir lime leaves
- 3 – 5 sprigs of Thai basil
- 2 cups water
- 1 1/2 tablespoons fish sauce
- 2 Jalapeno Peppers
Instructions For Bamboo Curry Recipe
Step-1. First of all, measure the water in a pot and boil it.
Step-2. Cut the meat into small pieces and put them in the boiling water. Stir once or twice.
Step-3. Add the bamboo shoots, coconut milk, fish sauce, red curry paste, and salt to taste in another pot. Mix well and cook over medium heat for about 7 – 10 minutes or until tender (Bamboo should be cooked but not mushy).
Step-4. Add the honey to the curry and cook for another 4 – 5 minutes or until honey dissolves.
Step-5. Put in chicken pieces (remove skin). Cook for about 7 – 10 minutes or until the chicken is thoroughly cooked on all sides.
Step-6. Add black mustard seeds, green chilies, ginger, and garlic to taste and stir well. Cook for about 2 – 3 minutes. Add lime leaves, bay leaves, and Thai basil sprigs at this point too.
Step-7. Add the water and bring it to a boil. Turn the heat off.
Step-8. Serve hot with rice!
Bamboo shoots come in two colors – green and brown. Brown shoots are starchier, tastier, and more aromatic than green shoots, although both are edible.
Both colored shoots are cut into small pieces and boiled in salted water for about 10 minutes before adding to the curry.
